POTATO VEGETABLE SOUP

INGREDIENTS

  • 2-3 Tbsp olive oil

  • 1 large onion, diced

  • 1 cup carrots, sliced

  • 1/2 cup celery, chopped

  • 1 garlic clove, minced

  • 2 cups water

  • 4 cups potatoes, peeled and diced

  • 2 Tbsp chicken-like seasoning

  • 1 tsp dry parsley flakes

  • 2 cups soy milk​

INSTRUCTIONS

  1. Put first 5 ingredients into large pot.

  2. Sauté vegetables until onion is soft and clear.

  3. Add water, potatoes, chicken-like seasoning, and parsley.

  4. Bring to a boil.  Cover and simmer slowly until vegetables are cooked.  Stir occasionally.

  5. Stir in soy milk.  Heat without boiling.
