POTATO VEGETABLE SOUP

INGREDIENTS

2-3 Tbsp olive oil
-
1 large onion, diced
-
1 cup carrots, sliced
-
1/2 cup celery, chopped
-
1 garlic clove, minced
-
2 cups water
-
4 cups potatoes, peeled and diced
-
2 Tbsp chicken-like seasoning
-
1 tsp dry parsley flakes
-
2 cups soy milk​

INSTRUCTIONS

Put first 5 ingredients into large pot.

Sauté vegetables until onion is soft and clear.
-
Add water, potatoes, chicken-like seasoning, and parsley.
-
Bring to a boil. Cover and simmer slowly until vegetables are cooked. Stir occasionally.

Stir in soy milk. Heat without boiling.
